converting itunes songs

Hi guys
basically here is my problem. i have purchased songs off itunes and i want to convert them to mp3 format. i was gonna use the program JHymn and then some decoder i found on a website, but i realised the website is like a year old. seeing as it is a year old, i imagine apple has upgraded its technology to help protect its files even further from tampering by kids like us. basically, i want to convert them to mp3 and scrub them enough to remove any trace that they were ever protected files. does anyone know how to do this in a relatively easy and preferably quick way? i am not terribly knowledgeable with all the computer talk these days so please explain it in as simple terms as possible.

oh one other thing... if i convert them to mp3 now, and apple increases protection technology in the future, if i play the songs from a cd on the computer or ipod will they work still or will there still be traces of protection files that apple programs could detect?

JHymn still works fine, as long as you didn't buy the files in iTunes 6.

do you lose much quality if you burn them to cd as wav files and then import them back into itunes as mp3s? i hate wasting discs coz its costly when you burn discs all the time
also, if i do import them from a cd to mp3 format, does this still have the protection data that was in the original protected m4p file?
