I took the disc out and clicked finished before the disc was finalized. Is there any way to put the disc back in the burn and finalize it with DVDFab Platinum?

you can use DVD Decrypter, IMG Burn or the burn engine of DVDFab and I think you can also use nero to close the disc

As SJ said, there are a number of ways to do this.
Here's a good method to finalize within Fab.
There are also some handy tools buried here in Fab, such as Finalize and Refresh Media detection...that aren't readliy apparent without some digging...


Right click on the Fab Icon >
Left click Properties >
Left click Find Target >
Left click PcSetup.exe >
Left click on the + in front of Patin-Couffin driver >
Now left click once to highlight your burner >
Right click on the selected burner >
Navigate to the bottom of the dropdown to Finalize the media

Every once in a while I'll have a disk that fails to finalize (don't know why) so I made an icon on the desktop for pcsetup. Makes it handy when I need it.
