How do I choose whether to copy to HD folders or make an ISO?

I don't believe DVDFab Free will allow you to set to ISO. I believe that is only available in the Platinum.

Sorry chaps, igore question above. I'm just stupid. No sooner had I posted the question (after several days head-scratching about the problem) than I found that all I have to do is click on the relevant store-folder or ISO browser button.

duhhh !!

That was so with older versions of the freeware version. However, recent releases allow the creation of an .iso image from the ripped files.

Oh wow, didn't even notice that it can make ISO. That is very neat.
