Why do enclosures have Max Capacities?

I've noticed that a lot of external hard drive enclosures have capacities (ie "supports up to 500gb HD". Since they are all the same size physically, why does it matter?

If I put a 750gb HD in an enclosure that only "supports up to 500gb", will it work? Will I break the HD and/or enclosure?

I appreciate any help on this subject
