I have used dvd2one in the past, it tells you what stream if forced so you can choose to back that up as well. Althought dvd2one use to change the UOP's so it did not force them on, but i had a get around for this.

What version of Fab are you using? I'm trying to think of one of my DVDs that I'm sure has forced english subtitles to go check and see. The subtitle files are so small I just generally leave them all in. I do almost all my backups in Customize mode and they always survive.
